Roasted Chicken Vegetable Soup

I love to be able to repurpose leftovers. I hate wasting food! Especially with how expensive good quality food is ! Whenever I roast chicken I always make 2 … why you ask? So usually we eat 1 that night for dinner, the second roasted chicken I use that week. I can make soup, salads, enchiladas, tacos. I mean the possibilities are endless. Saves you so much time during the week. This is one of my favorites to make.

Roasted Chicken and Vegetable Soup

Every time I roast chicken for dinner I make 2 chickens (since it takes the same amount of time) just so I can make this soup the next day.  My family loves it so much!  For breakfast my son will ask for this soup with an egg swirled in! 

Ingredients
  

  • 2 tablespoons olive oil or avocado oil
  • 1 large onion diced
  • 1 leek thinly sliced, optional
  • 4 carrots peeled, and diced
  • 2 celery diced
  • 2 tablespoons sea salt
  • 1 teaspoon oregano dried
  • 1 teaspoon thyme dried
  • 1 teaspoon dill dried
  • 1 teaspoon ground black pepper
  • ½ cup parsley finely chopped
  • 4 cups chicken or vegetable stock or broth
  • 2 cups water
  • 1-3 cups leftover roasted chicken

Instructions
 

  • Heat oil in large pot.  Add onion, leek, carrots, celery, salt, oregano, thyme, dill and ground black pepper.  Cook on high for 5 minutes. 
  • Add the parsley, broth/stock, water and chicken. 
  • Bring to a boil, lower heat to simmer, cover and cook for 35 minutes.

Quick Korean Beef Tacos

Quick Korean Beef Tacos

Korean food is one of my favorites, well hang on let me correct myself, food is my favorite… who am I kidding?  But seriously I love Asian Flavors.  What I love more than even that is a quick and simple meal.  I don’t know about your family but mine will pretty much eat anything as long as it looks good!  This is such a simple, versatile and delicious meal.  You can double the meat but don’t have to double anything else. I pair this with our favorite Siete Foods Almond Tortillas, some fresh lettuce and Crispy Quick Pickled Onions. 

Quick Korean Beef

Korean food is one of my favorites.  I love the strong and rich flavors.  This is a very quick way to recreate Korean Beef quickly and easily from home.  Serve with some tortillas, lettuce and pickled onions!

Ingredients
  

  • 1 pound ground beef 80/20
  • 1 whole onion diced
  • 8 whole garlic cloves minced
  • ½ cup coconut aminos
  • 4 tablespoons honey
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon fresh ginger
  • 1 tablespoon toasted sesame oil
  • ½ teaspoon fish sauce
  • ½ teaspoon sea salt
  • ½ teaspoon ground pepper
  • ½ cup green onions finely chopped
  • 1 tablespoon sesame seeds

Instructions
 

  • Heat a large skillet and add the ground beef, onions and garlic.  Cook until meat has browned and the onions are tender.  If there is a lot of liquid in the pan from the meat juices remove or cook down until the liquid is gone. 
  • While the meat, onions and garlic are cooking, combine the coconut aminos, honey, apple cider vinegar, fresh ginger, toasted sesame oil, fish sauce, sea salt and pepper.  Whisk until combined. 
  • Once the meat is cooked and brown add the sauce.  Continue to cook on high for an additional 8-10 minutes or until the sauce is reduced and thick. 
  • Garnish with green onions and sesame seeds.
