Fortunately you have to make my Sassy Beef Brisket to make this recipe but I promise you will not regret it. Once you have made the Brisket it takes just a few minutes to make the enchiladas. Look at these pictures… they honestly don’t do it justice.

Crispy Beef Brisket Enchiladas

You must make the Sassy Beef Brisket in order to make these enchiladas.  They are stuffed with all the deliciousness the brisket has to offer, plus gooey cheese and rolled in what is my opinion the best gluten free tortillas, Siete Foods Almond Flour Tortillas

Cook Time 12 minutes
Total Time 27 minutes
Servings 8 servings

Ingredients
  

  • 2 cups Sassy Beef Brisket shredded
  • 2 cups Sassy Beef Brisket Sauce
  • 2 cups Monterey Jack Cheese shredded
  • 8 Siete Foods Almond Tortillas
  • Avocado Oil Spray or Avocado Oil to Brush

Instructions
 

  • Preheat oven to 400 degrees 
  • I used a cast iron pan (my favorite) because you really get a nice crisp and the pans are beautiful ! Oil your pan of choice with Avocado Spray or brush with Avocado Oil. 
  • Place some of the brisket, sauce and cheese onto the tortilla and roll it.  Place it seam side down in the pan. 
  • Repeat with all 8 tortillas in package. 
  • Spray or brush avocado oil on the tops of the rolled tortillas
  • Pour the remaining sauce down the middle and sprinkle the remaining cheese over the sauce as well.  See the pictures in the gallery above for a visual. 
  • Place in 400 degree oven for 12 minutes until the cheese is nice and bubbly and the exposed tortilla is crispy brown.

Oh yes Baby! Am I the only one that loves pretty food! I mean really? Look at this gorgeous dish! I used goat cheese cheddar from Trader Joes which a lot of people who are dairy free seem to tolerate well. If you would like to keep it dairy free I promise it still taste amazing without the cheese. Omitting the cheese will also make it Whole30 compliant. I seriously can’t handle how good this is!

Such a beautiful and flavorful dish.  Delicious, spicy beef & zucchini stacked with enchilada sauce, goat cheese cheddar and Siete Cassava Tortillas.

Ingredients
  

  • 1 pound ground beef
  • 2 tablespoons olive or avocado oil
  • Β½ onion diced
  • 6 garlic cloves diced
  • 3 green onions diced
  • 1 zucchini diced
  • 2 teaspoons sea salt
  • 1 teaspoon ground pepper
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 5 Siete Cassava Tortillas or any tortilla you have except corn
  • 2 cups cheese, I used Goat Cheese Cheddar from Trader Joe’s shredded
  • 4-5 cups enchilada sauce

Instructions
 

  • Preheat oven to 400 degrees 
  • Heat oil in skillet.  Add the ground beef, onion, green onion and garlic. 
  • Cook until beef is browned. 
  • Add the zucchini, salt, pepper and spices.  Cook for 2 minutes to bloom the spices. Set aside. 
  • Lightly grease a round pan or cast iron skillet. Ladle a bit of sauce to coat the bottom.
  • Place a tortilla followed by a beef and zucchini mixture. See picture above. 
  • Ladle sauce, and sprinkle cheese. See picture above. 
  • Repeat this for a total of 5 layers. 
  • Bake for 20 minutes uncovered.

Eating more vegetables is a fabulous way to stretch your food budget!  These cauliflower steaks are so darn good.  You can serve them as a tasty side dish or top with an egg and have them for breakfast !

Cook Time 40 minutes

Ingredients
  

  • 1 large cauliflower
  • 4 garlic cloves minced
  • 1 cup enchilada sauce homemade or purchased
  • ΒΌ cup chicken broth
  • 3 tablespoons olive oil
  • Salt & Pepper

Instructions
 

  • Cut your cauliflower into 4 thick steaks.  Place in a casserole just big enough to fit the four steaks.
  • In a small bowl combine the garlic, enchilada sauce, chicken broth and olive oil.  
  • Whisk until combined and pour over the steaks. Sprinkle with salt and pepper. 
  • Cover and place in refrigerator for a minimum of 30 minutes, ideally you should marinade overnight or up to 24 hours.  It helps if you brush marinade over the top every few hours… get them nice and coated. 
  • Preheat over to 400 degrees.  Cook at this temperature for 15 minutes.  Then reduce heat to 350 and cook an additional 35 minutes. 
  • Serve drizzled with mayo or ranch, some cilantro and sesame seeds.
