Sesame Beef & Riced Cauliflower Meatballs

These delicious little Sesame & Riced Cauliflower Meatballs will wow you! I promise. I paired them with my Carrot Curry Sauce which made for the perfect combination! These are made with half ground meat and half riced cauliflower which makes them very nutrient dense. My daughter Jacqueline hates meatballs! So guess what I have been making at least once a week since she left to college… yep… meatballs. All kinds of meatballs. These little balls of heaven are jam packed with flavor best of all simple and quick to make. Also I wanted to point out that you can absolutely use ground chicken, pork or turkey.

Sesame Beef & Cauliflower Rice Meatballs

Nutrient dense, and jammed packed with flavor.  I like to make a double batch.  I bake ½ and freeze the other half uncooked for another time!

Cook Time 15 minutes
Total Time 20 minutes

Ingredients
  

  • 1 pound lean ground beef
  • 1 bag riced cauliflower frozen or fresh
  • 4 garlic cloves minced
  • 2 tablespoons black sesame seeds you may use white sesame seeds
  • 2 tablespoons parsley dried or fresh
  • 2 tablespoon chives or green onions dried or fresh
  • 1 tablespoon sea salt
  • 1 egg
  • 1 teaspoon ground pepper

Instructions
 

  • Preheat oven to 400 degrees 
  • Combine all ingredients in a large bowl, careful not to over mix which will make your meatballs tough. 
  • Use a cookie scoop to insure same size meatballs. 
  • Place on a parchment covered sheet pan. 
  • Bake for 15 minutes.
