Beef & Spinach Stuffed Crepes with Garlic Cream Sauce

I know … it’s a mouthful. Literally. It seems like a lot of work but I promise it isn’t especially if you break it up. You can make the crepes, sauce and filling in the morning or the day before. Just heat and build crepes and serve! These crepes are so filling and satisfying . My husband is Keto but my son and I aren’t. It has been fun coming up with tasty keto recipes that all of us can enjoy, even us non keto folks. The good thing is I am not dairy sensitive. Especially if it is good quality dairy. I can’t tolerate the keto diet long term because I have no gall bladder. Which in essence means I cannot process excessive amounts of fat. I bet these will make your little hearts sing with joy!

Beef & Spinach Filled Crepes with Garlic Cream Sauce

These filled crepes are so hearty and satisfying.  Keto and non Keto people will love them equally.  You will want to bathe in the garlic sauce.

Ingredients
  

Beef & Spinach Filling

  • 6 Fed By Fergie Keto Crepes made in advanced
  • 1 pound grassfed ground beef
  • 1 large onion finely diced
  • 1 pound frozen spinach defrosted and drained
  • 2 teaspoons sea salt
  • 1 teaspoon ground pepper

Keto Garlic Cream Sauce

  • 1 cup heavy whipping cream
  • 4 garlic cloves minced or finely grated
  • 2 tablespoons cream cheese
  • ½ cup fresh grated parmesan cheese
  • ½ teaspoon ground black pepper

Instructions
 

Beef & Spinach Filling

  • Heat a skillet and add the ground beef and onion.  Cook for 5-6 minutes until the beef is brown.  Break up as you cook. 
  • Add the spinach, salt and pepper. 
  • Cook for 2 more minutes. Set filling aside while you make the Garlic Cream Sauce. 

Garlic Cream Sauce

  • Pour the heavy cream into a saucepan with the garlic cloves and cream cheese.  Bring to a simmer but never let it boil.  
  • As soon as the cream is hot add the parmesan and ground black pepper.  Stir gently for 1 minute and your sauce is DONE !
