We are some serious salsa eaters! To be honest making salsa can be time consuming. There is a lot of chopping and dicing. The worst part it does not last very long in the refrigerator. My Salsa Cocida recipe is literally the easiest salsa recipe you will ever make and because it’s cooked it last up to 10 days in the refrigerator. I usually make a double batch and freeze half.

Salsa Cocida

This is the perfect blend of tomatoes, onions, garlic, jalapeño, cilantro and oregano. 
Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes
Course Snack

Ingredients
  

  • 6 roma tomatoes cut in half
  • 1/2 onion
  • 1-3 jalapeños stems removed and cut in half
  • 2 garlic cloves
  • 1/2 cup cilantro
  • 2 teaspoons sea salt
  • 1 teaspoon oregano
  • 1/2 teaspoon ground black pepper
  • 4 tablespoons light olive oil or avocado oil

Instructions
 

  • Place the tomatos, onion, jalapeno, garlic and cilantro in the blender. 
  • Cover the blender and blend on high for 30 seconds. 
  • Heat a medium saucepan and add the oil.  
  • Very carefully add the blender contents into the saucepan.  It will splatter so pour and stir at the same time. 
  • Cook for 10 minutes on medium heat, you will see it change colors, that is normal as the vegetables cook. 
  • Allow it to cool and transfer into a jar with a lid in the refrigerator for up to 10 days.

I love versatile recipes that I can cook in the Instant Pot or slow simmer in Slow Cooker. Besides all that the best part is it’s only 5 ingredients. You can eat this tasty pork dish alone, with a side dish, make tacos, burritos or quesadillas out of it. The possibilities are countless!

Easy Chile Verde

Probably one of the easiest, set it and forget it recipes !  Succulent, a little spicy, and melt in your mouth goodness. Pair this with some cauliflower rice, or make into your favorite burrito, taco or quesadillas. 
Prep Time 10 minutes
Cook Time 35 minutes
Total Time 45 minutes

Ingredients
  

  • 3-5 pound pork shoulder or pork butt
  • 1 onion sliced
  • 6 garlic cloves minced
  • 1 Jar green salsa I used Trader Joes Salsa Verde
  • 1 8 oz can Anaheim chile’s diced
  • 1 tablespoon sea salt
  • 1 teaspoon oregano
  • 1 teaspoon ground black pepper

Instructions
 

  • Place all ingredients in Instant Pot. 
  • Affix top and make sure valve is set to sealing. 
  • Press pressure cook and set time to 35 minutes.
  • Allow for natural release.
  • Once pressure is released (this can take up to 30 minutes) carefully remove the pork and shred with forks or in Kitchen Aid mixer with paddle. 
  • Place the pork back into the pot and mix well. 
  • If you are using a slow cooker place all ingredients into the pot, cover and set for 6 hours. Shred like instructed above and serve.
