Grilled Pan Cheese Pizza

My husband bought a Traeger Grill a few months ago. He has been so excited he literally grills most of our meals when he’s home. It seemed a little intimidating at first but after I tried it once I was hooked! You can absolutely make this pizza in the oven if grilling is not an option. This is such an easy recipe to make and it taste fabulous! 100% paleo crust so you can omit the cheese to keep it paleo… just top with all your favorite meats and veggies!

Grilled Pan Cheese Pizza

This is so tasty, especially if you are able to cook it on the grill like it did.  It adds a wonderful smokey flavor. The combination of cheeses will blow your socks off.

Ingredients
  

  • 1 ½ cups almond flour fine if possible
  • 1 ½ cups cassava flour
  • 1 teaspoon sea salt
  • cup warm water
  • 2 tablespoons honey
  • 1 tablespoon yeast
  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 2 eggs room temperature
  • cup marinara sauce, no sugar added
  • ½ cup sharp cheddar grated
  • ½ cup mozzarella cheese grated
  • ½ cup monterey jack cheese grated
  • ¼ cup parmesan cheese fine grated
  • 3 tablespoons fresh parsley chopped

Instructions
 

  • Preheat Traeger, regular grill or oven to 400 degrees. 
  • In a large bowl combine the almond flour, cassava flour and sea salt.  Set aside. 
  • In a small glass bowl combine the warm water, honey, yeast and oil.  Whisk until well combined.  Allow to sit until foamy. Usually around 5-10 minutes. 
  • Once your yeast mixture is nice and foamy combine with the dry ingredients, apple cider vinegar and eggs. 
  • Allow to sit for at least 1 hour, covered in a dark, warm place.  I like to let the dough sit for a few hours.  It gets that nice doughy flavor. 
  • Grease a 10 or 12 inch pan and push the dough to flatten into pan.  
  • Cook the dough for 10 minutes minutes. 
  • Remove from heat and spread the sauce, followed by the cheeses and parsley. 
  • Cook an additional 10-12 minutes or until the cheese is melted and starting to brown.
