Kimchi Style Fried Rice

I am obsessed with fermented foods. Especially sauerkraut and kimchi. I can eat ridiculous amounts in one day. I crave the spicy, sour crunch! Well I was really craving kimchi fried rice but I had no kimchi! I decided to try something a little different and guess what? It totally worked. So damn good. A simple and quick dish you can make with fresh cooked rice or leftover rice! You can absolutely use cauliflower rice as well, fresh or frozen.

Kimchi Style Fried Rice

This fried rice is an explosion of flavors.  It’s joy inducing!  
Prep Time 10 minutes
Cook Time 8 minutes
Total Time 18 minutes

Ingredients
  

  • 4 tablespoons avocado or olive oil
  • 4 green onions chopped
  • 4 garlic cloves minced or grated
  • 2 cups cabbage sliced thin
  • 2 eggs
  • 5 cups cooked rice I used Jasmine
  • 2 tablespoons toasted sesame oil
  • ¼ cup coconut amigos
  • 1-2 tablespoons korean chile pepper flakes I used Mother in Laws Gochugaru
  • 1 tablespoon Red Boat Fish Sauce
  • 2 tablespoons apple cider vinegar

Instructions
 

  • Heat oil in a large skillet and add the green onions, garlic and cabbage.  Cook on high for 2 minutes. 
  • Push the the vegetables to one side. Crack the eggs on the empty side and scramble. Once the eggs are cooked break them up and combine with the vegetables. 
  • Add the rice, sesame oil, coconut amigos, korean chile pepper flakes, and fish sauce. 
  • Cook the rice on high for at least 5 minutes. 
  • Once the rice is done cooking turn heat off and add the apple cider vinegar before serving .

Homemade Jalapeño Mayonnaise

Homemade Jalapeño Mayonnaise

Honestly if you’ve never made mayonnaise you must try at least once! So easy to make and without all the junk. My husband isn’t a huge fan of mayonnaise unless it’s homemade. Also you can make it any flavor you like, garlic, chipotle, avocado and in this case jalapeño! So tasty, tangy and spicy! I use it as a dip or a spread, it amazing either way!

Homemade Jalapeño Mayonnaise

Creamy spicy homemade mayonnaise without all the nasty ingredients and or sugar ! 
Prep Time 5 minutes
Servings 8 servings

Ingredients
  

  • 1 egg pasture raised, fresh and room temperature
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons pickled jalapeños
  • 1 tablespoon jalapeño brine
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper
  • 1 ⅓ cup avocado oil
  • ¼ cup pickled jalapeños chopped, optional

Instructions
 

  • The best way to make this mayonnaise is to use an emersion blender.  You can also make in Vitamix. 
  • If using emersion blender place all ingredients in large mouth jar.  
  • Place the emersion blender in the jar all the way to the very bottom.  
  • Start the blender and very slowly move up and down 3 or 4 times. 
  • If using the Vitamix pour the egg, apple cider vinegar, lemon juice, jalapeño’s, jalapeño brine, sea salt and black pepper. 
  • Start the blender on low.  Increase the speed and drizzle in the oil. Blend until nice and thick.  15-20 seconds. 
  • You can add the additional ¼ cup of jalapeño’s for extra spice and texture.

This is probably one of the easiest soups in Mexican Cuisine. The ingredients are simple as is the method of preparation. I like to use a combination of beef cuts but it’s completely up to you. My favorite combination is Shanks, Ox Tails, and Chunks

My daughter Josceline is visiting from college. I wanted to surprise her with something warm and cozy. Since she does not drink coffee (I know right? Who’s kid is she really…) I brewed some of my favorite tea and blended it with some other very tasty ingredients and came up with this little cup of fabulousness! I seriously can’t wait for you to try this! So creamy, frothy, and with the perfect amount of vanilla and spice!

Using the best possible ingredients makes me happy! My friend Monica gave me this bag of oatmeal and I was so impressed with their quality and flavor. I also love their resealable bag! Pukka tea is Fair Trade and 100% organically grown. Nothing but the best. Their teas make my heart sing. The amount of flavors and flavor combinations they carry will blow your mind. I have yet to taste them all !

Vanilla Chai Oatmeal Latte

Dairy Free, frothy, cozy goodness in this vanilla chai latte.  Made creamy and delicious with oatmeal so perfect for dairy free folks.

Cook Time 3 minutes
Total Time 11 minutes

Ingredients
  

  • 1 ½ cups boiling water
  • 2 Pukka Vanilla Chai tea bags or any other chai tea
  • 3 tablespoons oatmeal
  • 2-3 tablespoons honey

Instructions
 

  • Brew 2 tea bags in 1 ½ cups of boiling water for 15 minutes.  If you like your latte nice and hot brew tea in 1 cup of boiling water and add the remaining ½ cup of boiling water at the end of the brew cycle.  Toss the tea bags.
  • In Vitamix or Blendtec combine the brewed tea, oatmeal and honey.  
  • Blend on high for 1 ½ minutes. 
  • Pour into your favorite cup and enjoy right away!
