Broccolini with Lemon & Garlic

Farmer’s market veggies are my Jam! I have to control myself and buy just what I need for the week! This weekend it was raining the entire times I was kind of rushing through before I was soaked. People usually assume that Broccolini is immature broccoli but it isn’t. It’s actually a hybrid which was created in 1993. Its a cross between broccoli and Chinese broccoli. The long stems and small florets makes it very easy to cook, especially in store fries. The entire plant is edible, even the leaves. Broccolini unlike traditional broccoli is not very tasty raw. It can be bitter so cooked is best. One of my favorite qualities of broccolini is its easy to prep for cooking. I usually leave it whole or just cut in half. This side dish cooks in about 5 minutes. How easy is that ?

Broccolini with Lemon & Garlic

3 ingredients and 5 minutes is all you need to make this nutritious and tasty side dish.  Cook stove top or place a cast iron pan on grill and cook there !

Ingredients
  

  • 1-2 pounds fresh broccolini
  • 1-2 tablespoons olive or avocado oil
  • 3-4 garlic cloves minced or grated
  • ½ lemon juice

Instructions
 

  • Heat skillet, I love cooking in cast iron so that is what I use. 
  • Add the oil.  Lower the heat. 
  • Add the garlic and stir well. 
  • Immediately add the broccolini.  Increase the heat to high and stir fry until bright green. 
  • Turn the heat off and squeeze the lemon juice over the broccolini.  Done.  That’s it !
