Omelet Noodles
Sounds weird huh? I promise you they aren’t. They are in fact so easy to make and so delicious. They are a wonderful alternative to “noodles” when you are eating low carb or keto. I love to mix them in my fried rice or when I make Moo Shoo Pork like I am tonight!
Fergie’s Omelet Noodles
Tasty, easy, and inexpensive alternative when eating low carb or Keto. These are also Paleo and Whole30 compliant! Omelet noodles… ha ha who knew ?
Ingredients
- 6 eggs
- 3 tablespoons water
- 3 tablespoons coconut aminos
- 1 tablespoon mayonnaise
- 2 green onions finely diced
- oil spray or oil for pan
Instructions
- Preheat oven to 400 degrees
- Blend the eggs, water, coconut aminos and mayonnaise for 30 seconds.
- Spray or brush a generous amount of oil on your pan. I used a 13 x 13 square non stick, oven safe pan.
- Pour the egg mixture into prepared pan.
- Sprinkle the onions over the top.
- Bake in preheated oven for 5-6 minutes or until golden brown on the top (see pictures above)
- Allow to cool completely in pan.
- Gently separate from pan and lift out.
- Place on cutting board and gently roll.
- Slice thinly (see pictures above).
