Moo Shoo Pork Tacos

This is such a fun dish to make and to eat! Always a show stopper and a “Wow” producer at the table. Taco Tuesday should always be fun ! Am I right? You can start this dish the day before and marinate it, also good the day of. I like using a small pork tenderloin for a few reasons reasons, they are super inexpensive, easy to slice and the soak up marinades like no ones business.

Moo Shoo Pork

Ingredients
  

  • 1 boneless pork tenderloin sliced thinly
  • 3 tablespoons olive or avocado oil

Moo Shoo Marinade

  • 4 green onions
  • 4-6 garlic cloves
  • 1/4 cup cilantro
  • 3 tablespoons coconut aminos
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon green asian hot sauce
  • 1 teaspoon asian 5 spice
  • 1 teaspoon ground ginger

Mushroom Moo Shoo Gravy

  • 3 tablespoons butter
  • 8 ounces cremini or white button mushrooms sliced
  • 2 green onions chopped
  • 1 tablespoon arrowroot powder
  • 1/4 cup coconut aminos
  • 3/4 cups water
  • salt and pepper to taste

      Instructions
       

      • Combine marinade ingredients in blender.  Pulse 4-6 times until mixed through but still chunky. 
      • Pour over the pork, cover and refrigerate. 
      • To make the gravy heat the butter in a large skillet.  Add the mushrooms and green onions. 
      • Cook on high for 5 minutes 
      • In a measuring cup measure the coconut aminos and water.  Add the arrowroot powder and whisk together. 
      • Pour over the mushrooms and simmer until nice and thick. 
      • To make the Moo Shoo Pork.  Heat a large skillet and add the oil and pork with all the marinade. Cook on high for 6-8 minutes until the pork is nice and brown. 
      • Add the Omelet Noodles and toss cooking for an additional minute to warm noodles. 
      • Serve Moo Shoo Pork on tortillas and smoother with the Mushroom Gravy!
