BEST EVER GLUTEN FREE CHOCOLATE DONUT
Would you believe me if I said this is the best gluten free chocolate donut ever? I guess you will have to make them to believe me! These little beauties are gorgeous, moist, and super chocolaty! As a busy momma what I love the most about these is that they are done from start to finish in 30 minutes!
Best Ever Gluten Free Chocolate Donut
What’s a girl gotta do to convince you these ARE the best ever darn gluten free chocolate donuts? I guess you will have to make them to find out !
Ingredients
- 1 cup Bob’s Red Mill 1 to 1 Gluten Free Flour the blue bag
- 1 teaspoon baking soda
- ½ teaspoon sea salt
- 1 egg
- 1 cup Enjoy Life Mini Chocolate Chips
- ½ cup coconut oil
- ½ cup maple syrup
- 1 tablespoon vanilla extract
- ½ cup unsweetened applesauce
Chocolate Glaze
- 1 cup Enjoy Life Mini Chocolate Chips
- 1 tablespoon coconut oil
Instructions
Chocolate Donut
- Preheat oven to 350 degrees
- In a medium bowl combine the flour, baking soda, and salt. Whisk to combine and set aside
- In a saucepan on medium heat combine the coconut oil, chocolate chips and maple syrup. Whisk continuously until the chips are melted. It literally takes just a minute or two. Do Not Overcook!
- Remove from heat and whisk in the vanilla extract and applesauce. Whisk until perfectly combined.
- Pour the saucepan contents and egg to the flour mixture. Whisk until smooth.
- Pour batter into a large piping bag or gal size zip bag. If using a zip bag cut the tip.
- Prepare donut pan by spraying with non stick spray or brush with melted coconut oil.
- Pipe the batter into pan. You will have the perfect amount of batter to make 9 donuts !
- Place in oven and bake for 12-15 minutes. Make sure the donuts are firm and fluffy before you pull them out !
Chocolate Glaze
- In a small saucepan combine the chocolate chips and coconut oil, melt on low heat and set aside .
- Flip the donuts onto a parchment covered sheet pan, gently spoon glaze over the top of the donuts. You will have the exact amount for the 9 donuts.
- Refrigerate to firm the glaze… but I doubt you will be able to wait!
