Fergie’s Oat Flour Tortillas
I love making tortillas. It’s such a labor of love. I have been making them for years. The smile on my family’s faces when I put a huge stack of warm tortillas on the table will never get old. I started making oat tortillas a few years ago when I was playing with my recipe to make it a bit healthier. I mean let’s face it… it’s a tortilla. You can only make them so healthy before they stop tasting like tortillas!
Fergie’s Oat Flour Tortillas
Oat flour tortillas that are soft and chewy… worth the work!
Ingredients
- 1 1/2 cups raw organic whole oats (not instant oats) Pulse in Vitamix or Blendtech to make a fluffy flour
- 1 1/2 cups unbleached flour
- 3 tablespoons pork lard, duck fat or palm shortening
- 1 1/2 teaspoon baking powder
- 1 1/2 teaspoons sea salt
- boiling water boil at least 1 1/2 cups water in kettle, there is no exact measurement but I will explain in recipe.
Instructions
- In a stand mixer bowl combine the oat flour, unbleached flour, fat, baking powder and sea salt.
- Start the mixer on low and run for 5 minutes.
- Keep the mixer on and slowly pour in the boiling water, until the dough holds together.
- Knead on medium speed for 10 minutes.
- Remove the dough from the mixer, it should be soft and smooth.
- Cut the dough into equal pieces and cover with plastic wrap for at least 30 minutes.
- Working on a floured surface flatten the dough balls using a rolling pin.
- Cook on a very hot skillet until bubbles form before flipping.
- Place cooked tortillas in a tortilla warmer or plastic bag to keep soft and pliable.
