Spinach & Bacon Meatloaf
I live in a house full of meatloaf lovers. So much so that when I make this recipe I double it just so there will be leftovers ! Thats 4 pounds of meat ! Insane right? This meatloaf is juicy, tasty and freezes uncooked just beautifully ! You can make it up to 3 days before, cover and keep refrigerated until you are ready to bake. The combination of the caramelized onions, bacon, pepper jack and spinach is just magical !
Spinach & Bacon Meatloaf
Succulent, flavorful, jam packed full of spinach and caramelized onions.
Ingredients
- 1 large onion diced
- 6 garlic cloves minced
- 3 slices bacon uncooked and chopped
- 2 pounds ground turkey
- 8-10 ounces frozen spinach defrosted and drained if packed in water
- 2 tablespoons your favorite all purpose seasoning I used Trader Joe’s Umami Mushroom Seasoning
- 1 large egg
- 1 cup pepper jack cheese optional
Instructions
- Preheat oven to 350 degrees
- Heat a skillet and get it nice and hot. Add the diced onion, garlic and bacon.
- Cook until the bacon starts to brown and the onions are tender and translucent.
- Set aside and allow to cool.
- In a large bowl combine the turkey, spinach, seasoning, egg, onion garlic and bacon mixture along with the cheese if you are using it.
- Combine well. Shape a rectangular loaf on a parchment covered sheet pan.
- Bake until the center is firm and it reaches 160-165 degrees with meat thermometer.
- Place under broiler for 3 minutes to brown the top if necessary.
