Banana Bread with Almond Butter Swirl & Chocolate Chips

This is an oldie but goodie. I have been baking and cooking Paleo foods and desserts for many years! I don’t even hardly ever measure anymore just because I have been making these recipes for so long. I don’t like to call this bread healthy because lets be honest … sugar is sugar! Banana’s have sugar as does the maple used to sweeten this bread and the chocolate chips if you choose to use them. FYI… you can cut the sugar and carbs by omitting the chocolate chips and the maple syrup. You can also change it up a bit by using a natural peanut butter or other nut butter instead of almond butter. I like using fine blanched almond flour but any almond flour will work! Also I love using the Trader Joe’s Raw Almond Butter because its super creamy and almost runny which makes it very easy to swirl !

Banana Bread with Almond Butter Swirl & Chocolate Chips

Ingredients
  

  • 3 bananas very ripe
  • 3 eggs
  • 2 tablespoons vanilla extract
  • 5 tablespoons maple syrup or honey
  • 1/4 cup coconut oil melted and cooled slightly
  • 2 cups almond flour fine, blanched
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 5 tablespoons almond butter I use Trader Joe’s Raw Almond Butter
  • 1/2 cup Enjoy life or Lily’s Chocolate Chips optional

Instructions
 

  • Preheat the oven to 350 degrees. 
  • Easiest way to to this is to blend the banana’s, eggs, vanilla, maple syrup/honey and coconut oil in the blender for about 15-20 seconds.  You can also mash the banana’s and whisk in the eggs, vanilla, maple syrup/honey and coconut oil.  Which ever way you choose will work. 
  • In a large bowl combine the above wet ingredients with the almond flour, baking soda, and sea salt. Whisk until just mixed (do not over mix)
  • Ince you decide the type of pan you will be using grease generously with coconut oil, cover with parchment paper followed by more coconut oil or baking spray. 
  • Pour the batter into the pan and swirl the almond butter over the top followed by sprinkling the chocolate chips. 
  • Bake for 40 minutes or until the center is firm and the top is nice and golden!
