Banana Bread with Almond Butter Swirl & Chocolate Chips

Deliciously sweet, moist and hands down the best banana bread your lips will ever taste !

Ingredients
  

  • 3 bananas very ripe
  • 3 eggs
  • 2 tablespoons vanilla extract
  • 5 tablespoons maple syrup or honey
  • 1/4 cup coconut oil melted and cooled slightly
  • 2 cups almond flour fine, blanched
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 5 tablespoons almond butter I use Trader Joe's Raw Almond Butter
  • 1/2 cup Enjoy life or Lily's Chocolate Chips optional

Instructions
 

  • Preheat the oven to 350 degrees. 
  • Easiest way to to this is to blend the banana's, eggs, vanilla, maple syrup/honey and coconut oil in the blender for about 15-20 seconds.  You can also mash the banana's and whisk in the eggs, vanilla, maple syrup/honey and coconut oil.  Which ever way you choose will work. 
  • In a large bowl combine the above wet ingredients with the almond flour, baking soda, and sea salt. Whisk until just mixed (do not over mix)
  • Ince you decide the type of pan you will be using grease generously with coconut oil, cover with parchment paper followed by more coconut oil or baking spray. 
  • Pour the batter into the pan and swirl the almond butter over the top followed by sprinkling the chocolate chips. 
  • Bake for 40 minutes or until the center is firm and the top is nice and golden!
