Mashed Cauliflower Pucks

I love keeping my freezer packed with awesome little secrets ready to be made into something fabulous ! I like to take my weekends to prepare for future meals. Plan for healthy nutrient dense dishes I can prepare during the week, or I use the time to use up vegetables into dishes to use in the near future. So here it is… I love cauliflower mash ! I froze some to test it out and it freezes beautifully! I started freezing it in silicon molds and then popping them into freezer bags for perfect portions! Super simple and easy to prepare!

Cauliflower Mash Pucks

Wait until you try these little beauties ! Make ahead and freeze cauliflower mash portioned and ready to heat and eat!

Ingredients
  

  • 1 large cauliflower head
  • ½ cup water
  • ¼ cup heavy cream or any milk or cream alternative
  • 3 tablespoons butter, salted
  • 1 tablespoon sea salt
  • 1 teaspoon ground black pepper

Instructions
 

  • I like to clean up and trim the cauliflower right in the packaging.  It keeps the mess down to a minimum. 
  • Flip it upside down, unwrap the plastic wrapping, cut the stem and trim your cauliflower.  Wrap up the scraps and toss. 
  • Place the ½ cup of water in Instant Pot, cauliflower, sprinkle with a bit of salt and pepper. 
  • Place the lid and affix the lid.  Making sure the valve is set to “Sealing” 
  • Press Pressure Cook or Manual and set time to 6 minutes. 
  • Once the time is up allow to sit for 5 minutes to naturally release some of the pressure.   
  • Manually remove the remaining pressure. 
  • Place the cooked cauliflower in a strainer and press as much of the liquid out as possible.  I like to leave the cauliflower in the strainer for at least 15 minutes. 
  • Place the cream, butter, salt and pepper followed by the cauliflower in your vitamin or blend tech. Blend until smooth.  I blended on high for 30 seconds. 
  • Pour mash into silicone mold.  Once frozen you can pop them out of mold and place in a freezer bag or freezer safe container.  Heat and eat when ready!
