I love Trader Joe’s … don’t you?  You will see me mention them a lot because I simply love their ingredients!  I’m sort of glad they are not very close to me or I would be in trouble!  I am happy to give you suggestions on where you can find the ingredients locally.  This made my house smell like garlicy goodness. Best part is… it takes less than 30 minutes to prepare and cook !

Chop and measure everything and have it ready to go!  It’s called Mise en Place “putting in place or everything in place” 
Look at how delicious and beautiful this dinner is.  One pot meal… simple, quick and freaking delicious! 
Shrimp, cauliflower gnocchi, bacon & spinach… I mean really? 

Garlic Shrimp & Cauliflower Gnocchi

So excited to share this recipe.  Minimal Ingredients packed with flavor and textures.  My mouth is watering typing this recipe!

Cook Time 10 minutes
Total Time 20 minutes
Course Main Course

Ingredients
  

  • 4 strips bacon diced, preferably all natural, sugar and nitrate free
  • 1 small red onion diced
  • 6 garlic cloves minced
  • 1 bag cauliflower gnocchi
  • 1 pound large shrimp peeled & deveined
  • ½ pound frozen spinach rinsed & drained
  • Salt & Pepper to taste

Instructions
 

  • Heat a large skillet and add bacon, red onion and garlic cloves.  Cook on high for 5 minutes until the bacon starts to crisp and the onions are tender. 
  • If the bacon does not render enough fat add 1 tablespoon olive oil or any kind of cooking oil you may have.  Keeping the heat on high add the gnocchi and the shrimp.  Season to taste and cook an additional 5 minutes or until the shrimp is nice and pink. 
  • Add the spinach and cook for 1 minute to incorporate!  Check and adjust salt and pepper. 
  • Serve nice and hot.
