Crispy Beef Brisket Enchiladas

Fortunately you have to make my Sassy Beef Brisket to make this recipe but I promise you will not regret it. Once you have made the Brisket it takes just a few minutes to make the enchiladas. Look at these pictures… they honestly don’t do it justice.

Crispy Beef Brisket Enchiladas

You must make the Sassy Beef Brisket in order to make these enchiladas.  They are stuffed with all the deliciousness the brisket has to offer, plus gooey cheese and rolled in what is my opinion the best gluten free tortillas, Siete Foods Almond Flour Tortillas

Cook Time 12 minutes
Total Time 27 minutes
Servings 8 servings

Ingredients
  

  • 2 cups Sassy Beef Brisket shredded
  • 2 cups Sassy Beef Brisket Sauce
  • 2 cups Monterey Jack Cheese shredded
  • 8 Siete Foods Almond Tortillas
  • Avocado Oil Spray or Avocado Oil to Brush

Instructions
 

  • Preheat oven to 400 degrees 
  • I used a cast iron pan (my favorite) because you really get a nice crisp and the pans are beautiful ! Oil your pan of choice with Avocado Spray or brush with Avocado Oil. 
  • Place some of the brisket, sauce and cheese onto the tortilla and roll it.  Place it seam side down in the pan. 
  • Repeat with all 8 tortillas in package. 
  • Spray or brush avocado oil on the tops of the rolled tortillas
  • Pour the remaining sauce down the middle and sprinkle the remaining cheese over the sauce as well.  See the pictures in the gallery above for a visual. 
  • Place in 400 degree oven for 12 minutes until the cheese is nice and bubbly and the exposed tortilla is crispy brown.
