Keto Deep Dark Chocolate Muffins
My husband has been doing a very healthy, medically supervised Keto Diet Plan. He has been doing really good about eating what he is told during the week so when he is home on the weekends I like to make him healthy Keto desserts he can enjoy! I threw these together today and honestly i was floored at how delicious they were. They taste like Coco Puffs… do you guys remember that cereal? These muffins are soft, moist and full of rich chocolate flavor. Oh hey… did I mention they are flourless ?
Keto Deep Dark Chocolate Muffins
Need I say more ? Deep dark chocolate rich flavor, moist and just the perfect amount of sweetness !
Ingredients
- 1 cup Smooth Almond Butter
- 1/4 cup Smooth All Natural Peanut Butter
- 2 tablespoons unsalted butter softened
- 1 cup Lakanto Monk Fruit Sweetener You can also use Swerve
- 2 tablespoons vanilla extract
- 5 eggs
- 2 tablespoons heavy whipping cream
- 1 teaspoon baking soda
- 1/2 teaspoon sea salt
- 2 heaping tablespoons Deep Dark Cocoa Powder
Instructions
- Preheat oven to 350 degrees
- Combine the almond butter, peanut butter, butter and sweetener in bowl of stand mixer. Mix on high with whisk attachment for 5 minutes.
- Reduce heat to medium and add the vanilla, the eggs one at a time, and the whipping cream. Increase speed again and mix for 2-3 minutes until nice and light.
- Add the baking soda, sea salt and cocoa powder. Mix on high for 1 minute.
- Scrape the bowl sides and give it a little mix.
- Use a Medium Cookie Scoop to scoop uniform amounts into muffin paper lined cupcake pan.
- Bake for 25-30 minutes, or until the muffins are puffy and shinny … firm in the center.
