Fiesta Salmon
My family would eat Salmon every single day if allowed. I am always trying to come up with fresh new ways to prepare their favorite fish. It was warm all day and I was looking for something fresh and low carb. Jacob had 3 servings and asked if I would make this again next week… so I guess he liked it. It’s kind of like a deconstructed Salmon Taco, how fun is that?
Fiesta Salmon
Perfectly crusted salmon on a bed of crispy tortilla strips and covered with a fresh pico de gallo.
Ingredients
- 2 pounds fresh salmon cut into 6-8 pieces
Salmon Rub
- 2 teaspoons cumin
- 2 teaspoons granulated garlic
- 2 teaspoons chile powder
- 2 teaspoons onion powder
- 2 teaspoons sea salt
- 1/2 teaspoon ground pepper
Pico de Gallo
- 2 tomatoes diced
- 1/2 red onion diced
- 1/2 cup fresh cilantro chopped
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon sea salt
- 1/4 teaspoon oregano
Crispy Tortilla Strips
- 4 corn tortillas cut into thin strips
- oil for frying
Instructions
- Combine the pico de gallo ingredients in a medium bowl. Place in refrigerator until ready to use.
- Heat oven or grill to 400 degrees.
- Combine the rub ingredients.
- Spray or rub some oil on salmon.
- Generously cover the salmon in rub on both sides.
- Spray a large pan or cast iron pan with oil.
- Place the fish in pan and cook for 20-30 minutes until the fish is firm.
- While the fish is cooking fry the tortilla strips until crispy.
- Plate the dish by placing the tortilla strips on platter, followed by the fish and covered with the pico de gallo.
