Cassava Street Taco Tortillas

Happy Taco Tuesday! What is it about little street tacos that make them taste so much better ? I love small street tacos… ! They are so cute and I especially love them when they don’t make my stomach hurt! I am very sensitive to corn products and I have to be careful when I eat them because I can end up sick for days after consuming them. I still love my Siete Tortillas but I love making these because they are fun to eat and also easy to make.

Cassava Street Taco Tortillas

Fun sized Cassava Flour tortillas !  Perfect for Street Taco Tuesday! 
Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes
Servings 16 tortillas

Ingredients
  

  • 1 cup Cassava Flour
  • 3 tablespoons palm shortening
  • 1 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 3/4 cup hot water

Instructions
 

  • Place all ingredients into stand mixer and set on medium for 5 minutes.
  • Take dough out of mixer bowl and shape into a square. 
  • Cut into 16 small pieces (see picture above) 
  • Roll each dough ball and flatten out between two pieces of parchment or by using a tortilla press (see picture above)  
  • Heat a skillet or cast iron skillet and cook tortillas for 1 minute on each side. 
  • Place into a plastic bag right after cooking.  This will make them soft and pliable.  Do not skip this step. 
  • Store in refrigerator for up to a week or freeze.
