Fiesta Salmon

My family would eat Salmon every single day if allowed. I am always trying to come up with fresh new ways to prepare their favorite fish. It was warm all day and I was looking for something fresh and low carb. Jacob had 3 servings and asked if I would make this again next week… so I guess he liked it. It’s kind of like a deconstructed Salmon Taco, how fun is that?

Fiesta Salmon

Perfectly crusted salmon on a bed of crispy tortilla strips and covered with a fresh pico de gallo. 
Prep Time 30 minutes
Cook Time 20 minutes
Total Time 50 minutes

Ingredients
  

  • 2 pounds fresh salmon cut into 6-8 pieces

Salmon Rub

  • 2 teaspoons cumin
  • 2 teaspoons granulated garlic
  • 2 teaspoons chile powder
  • 2 teaspoons onion powder
  • 2 teaspoons sea salt
  • 1/2 teaspoon ground pepper

Pico de Gallo

  • 2 tomatoes diced
  • 1/2 red onion diced
  • 1/2 cup fresh cilantro chopped
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon oregano

Crispy Tortilla Strips

  • 4 corn tortillas cut into thin strips
  • oil for frying

Instructions
 

  • Combine the pico de gallo ingredients in a medium bowl.  Place in refrigerator until ready to use. 
  • Heat oven or grill to 400 degrees. 
  • Combine the rub ingredients. 
  • Spray or rub some oil on salmon. 
  • Generously cover the salmon in rub on both sides. 
  • Spray a large pan or cast iron pan with oil. 
  • Place the fish in pan and cook for 20-30 minutes until the fish is firm. 
  • While the fish is cooking fry the tortilla strips until crispy. 
  • Plate the dish by placing the tortilla strips on platter, followed by the fish and covered with the pico de gallo.
