My husband is currently on a medically monitored Ketogenic diet. Honestly I’m not a fan of how most people are doing this diet only because they are not eating the proper foods in the correct amounts. Cheap and poor quality foods on this diet are a huge no-no. It just becomes a crappy Atkins Diet at that point. Pre, during and post diet bloodwork is imperative as is monitoring blood sugars and ketones. In so many words.. be careful ! Quick weightless is not worth it !

Honey has been doing great on this diet! He is down a significant amount of weight in a very short amount of time. I have been very careful making sure his meals are Macro specific and well balance. All 100% organic, pasture raised and as clean as possible. He has incredible will power and has not complained once. I decided to treat him to a little something special today so I made him this fabulous granola. Remember when on a Keto diet, foods like this should not be over indulged in. ¼ cup a couple times a week is all you should be eating. BUT… if not Keto… HAVE AT IT AND ENJOY BECAUSE ITS DARN GOOD! Maple & Cinnamon Keto Granola

Tasty & just the right amount of “sweet” to satisfy those pesky cravings when on a low carbohydrate diet.  Made with the nuts, seeds, coconut oil and Lakanto Maple Syrup.

Cook Time 12 minutes
Total Time 22 minutes

Ingredients
  

  • ½ cup almonds sliced
  • ½ cup pepita seeds raw
  • ½ cup pecans pieces
  • ½ cup hemp seeds raw
  • 1 tablespoon golden flaxseeds
  • 1 tablespoon chia seeds
  • 3 tablespoons coconut oil
  • 3 tablespoons Lakanto Maple Syrup
  • 1 tablespoon vanilla extract
  • 1 teaspoon cinnamon
  • ½ teaspoon sea salt

Instructions
 

  • Preheat oven to 350 degrees. 
  • Combine the almonds, pepitas, pecans, hemp seeds, flaxseeds and chia seeds in food processor. Pulse to achieve a course grind. (See picture above) 
  • Melt the coconut oil but be careful not to over heat.  Warm until just melted. 
  • Add the Lakanto Maple syrup and vanilla.  Combine well. 
  • In a large bowl combine the nut and seed mixture with the melted coconut oil, maple, vanilla, cinnamon and salt.  Mix well. 
  • Spread the mixture onto a parchment covered baking sheet. 
  • Bake for 7 minutes.  Carefully stir and flip mixture and bake the remainder 5 minutes. 
  • Allow to cool completely before storing. 
  • Eat alone or over plain full fat yogurt, or in a bowl with some unsweetened almond milk !
