Fergie's Oat Flour Tortillas

Oat flour tortillas that are soft and chewy... worth the work!

Ingredients
  

  • 1 1/2 cups raw organic whole oats (not instant oats) Pulse in Vitamix or Blendtech to make a fluffy flour
  • 1 1/2 cups unbleached flour
  • 3 tablespoons pork lard, duck fat or palm shortening
  • 1 1/2 teaspoon baking powder
  • 1 1/2 teaspoons sea salt
  • boiling water boil at least 1 1/2 cups water in kettle, there is no exact measurement but I will explain in recipe.

Instructions
 

  • In a stand mixer bowl combine the oat flour, unbleached flour, fat, baking powder and sea salt.
  • Start the mixer on low and run for 5 minutes.
  • Keep the mixer on and slowly pour in the boiling water, until the dough holds together.
  • Knead on medium speed for 10 minutes.
  • Remove the dough from the mixer, it should be soft and smooth.
  • Cut the dough into equal pieces and cover with plastic wrap for at least 30 minutes.
  • Working on a floured surface flatten the dough balls using a rolling pin.
  • Cook on a very hot skillet until bubbles form before flipping.
  • Place cooked tortillas in a tortilla warmer or plastic bag to keep soft and pliable.
